Need an excuse to eat a muffin?

These muffins are packed with Vitamin B which helps you convert food into energy and metabolize fats and proteins!

They are also a great source of Vitamin C, need for immune health & Vitamin A, which helps your skin, eyesight, bones, reproductive system and also supports the immune system.

Not to mention, these muffins also contain a good amount of magnesium & iron which is super important for us women and those who are anemic.

Have I convinced you yet? (But I didn’t even get to talk about how delicious they are and how much my little nephew Porter even LOVES them – yes it got the stamp of approval from a 2 year old).

BONUS tip: spread coconut oil on them instead of butter for even more energy and watch it melt over these hot cross buns!

Spinach & Banana Breakfast Muffins

Prep Time: 8 minutes

Cook Time: 17 minutes

Yield: 12 muffins

Spinach & Banana Breakfast Muffins

Ingredients

  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce (or half an apple if using strong blender like vitamix)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 handfuls of fresh organic spinach - uncooked (could also add shredded carrots, shredded zucchini, or shredded yellow squash (all raw) to really pack it full of veggies!)
  • 1 ripe banana
  • 2 tablespoons Organic Coconut Oil (melted)
  • 1.5 cups buckwheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350° F
  2. Add first 8 ingredients to blender & blend first
  3. Add the dry ingredients & blend some more
  4. Grease muffin tins
  5. The mixture will be dense, use spatula to pour into muffin tins
  6. Bake for 17-20 minutes
