Gluten-Free Turkey Burger With Homemade Paleo Tzatziki Sauce

Ingredients

  • Tzatziki Sauce:
  • 3/4 cup coconut yogurt
  • 1/4 cup fresh squeezed lemon juice
  • 1/2 cup chopped cucumber
  • 1 teaspoon fresh garlic, minced
  • 2 tablespoons fresh dill or 2 tsp dried dill
  • 1 teaspoon sea salt
  • 1/4 cup chopped kalamata olives (optional)

  • Turkey Burgers (makes 4):
  • 1 pound ground turkey meat
  • 2/3 cups of cooked quinoa

Instructions

  1. First make sure quinoa is cooked (boil 2:1 ratio of water to quinoa)
  2. In a big bowl mix the ground turkey meat with cooked quinoa and make 4 patties. Grill.
  3. In a small bowl, mix the coconut yogurt, lemon juice, cucumber, minced garlic, dill, and sea salt. Set aside.
  4. Once patties are cooked through, serve with sauce on top. No bun required. Serve in a bowl for a Mediterranean-style burger.
